A library of extracellular \u03b1\u2010<jats:sc>L<\/jats:sc>\u2010rhamnosidases (31 different items) was obtained by screening 16 different fungal strains under different cultivation conditions, and several of these preparations catalyzed the derhamnosylation of asiaticoside. Specifically, the enzymes produced by <jats:italic>Fusarium oxysporum<\/jats:italic> were selected for the synthesis of derhamno\u2010degluco\u2010asiaticoside (<jats:bold>2<\/jats:bold>) and also of derhamno\u2010asiaticoside (<jats:bold>3<\/jats:bold>), by <jats:italic>in situ<\/jats:italic> glucose\u2010inhibition of contaminating \u03b2\u2010<jats:sc>D<\/jats:sc>\u2010glucosidases. \u03b2\u20101,4\u2010Galactosyltransferase from bovine milk was subsequently used for the galactosylation of the two asiaticoside derivatives <jats:bold>2<\/jats:bold> and <jats:bold>3<\/jats:bold>, using 20% v\/v DMSO as a cosolvent in order to increase substrate solubility.
