Usually, they are considered wastes and have been traditionally used only for tea preparation. The main objective of this work was to explore the valorization of mulberry leaves by polyphenols microwave\u2010assisted extraction (MAE) and characterization of their antioxidant activity and phenolic composition. A 2<jats:sup>3<\/jats:sup> factorial design combined with response surface methodology were applied to characterize the effect of main microwave parameters on total phenolic content (TPC).<\/jats:p><\/jats:sec><jats:sec><jats:title>RESULTS<\/jats:title><jats:p>The optimized MAE conditions were 20\u2009mL of ethanol:water (1:1; v\/v), 120\u2009\u00b0C, 28\u2009min, 0.414\u2009g and medium stirring speed. Under these conditions, TPC was 19.7\u2009\u00b1\u20092.0\u2009mg gallic acid equivalents (GAE) g<jats:sup>\u20101<\/jats:sup> dry plant (DP), and antioxidant activity was 15.3\u2009\u00b1\u20091.0\u2009mg ascorbic acid (AA) g<jats:sup>\u20101<\/jats:sup> DP (ferric reduction activity power \u2013FRAP\u2013 assay), 18.6\u2009\u00b1\u20091.3\u2009mg Trolox equivalents (TE) g<jats:sup>\u20101<\/jats:sup> DP (2,2\u2010diphenyl\u20101\u2010picrylhydrazyl \u2013DPPH\u2013 assay) and 186\u2009\u00b1\u200915\u2009mg TE g<jats:sup>\u20101<\/jats:sup> DP (oxygen radical absorbance capacity \u2013ORAC\u2013 assay). When compared with ultrasound extraction and Pharmacopeia reference method, MAE was more efficient, representing a valuable technology. Of the 13 compounds identified by HPLC, the most abundant were rutin, chlorogenic, \u03b2\u2010resorcylic and caffeic acids.<\/jats:p><\/jats:sec><jats:sec><jats:title>CONCLUSION<\/jats:title><jats:p>These results indicate that mulberry leaves are of potential interest for agro\u2010food industries as a new source of
