Here we consider the natural off-diagonal variant<jats:inline-formula><jats:alternatives><jats:inline-graphic xmlns:xlink=\"http:\/\/www.w3.org\/1999\/xlink\" mime-subtype=\"png\" xlink:href=\"S0963548322000360_inline6.png\"\/><jats:tex-math>$r(B_{cn} ^{(k)}, B_n^{(k)})$<\/jats:tex-math><\/jats:alternatives><\/jats:inline-formula>for fixed<jats:inline-formula><jats:alternatives><jats:inline-graphic xmlns:xlink=\"http:\/\/www.w3.org\/1999\/xlink\" mime-subtype=\"png\" xlink:href=\"S0963548322000360_inline7.png\"\/><jats:tex-math>$c \\in (0,1]$<\/jats:tex-math><\/jats:alternatives><\/jats:inline-formula>. In this more general setting, we show that an interesting dichotomy emerges: for very small<jats:inline-formula><jats:alternatives><jats:inline-graphic xmlns:xlink=\"http:\/\/www.w3.org\/1999\/xlink\" mime-subtype=\"png\" xlink:href=\"S0963548322000360_inline8.png\"\/><jats:tex-math>$c$<\/jats:tex-math><\/jats:alternatives><\/jats:inline-formula>, a simple<jats:inline-formula><jats:alternatives><jats:inline-graphic xmlns:xlink=\"http:\/\/www.w3.org\/1999\/xlink\" mime-subtype=\"png\" xlink:href=\"S0963548322000360_inline9.png\"\/><jats:tex-math>$k$<\/jats:tex-math><\/jats:alternatives><\/jats:inline-formula>-partite construction dictates the Ramsey function and all nearly-extremal colourings are close to being<jats:inline-formula><jats:alternatives><jats:inline-graphic xmlns:xlink=\"http:\/\/www.w3.org\/1999\/xlink\" mime-subtype=\"png\" xlink:href=\"S0963548322000360_inline10.png\"\/><jats:tex-math>$k$<\/jats:tex-math><\/jats:alternatives><\/jats:inline-formula>-partite, while, for<jats:inline-formula><jats:alternatives><jats:inline-graphic xmlns:xlink=\"http:\/\/www.w3.org\/1999\/xlink\" mime-subtype=\"png\" xlink:href=\"S0963548322000360_inline11.png\"\/><jats:tex-math>$c$<\/jats:tex-math><\/jats:alternatives><\/jats:inline-formula>bounded away from<jats:inline-formula><jats:alternatives><jats:inline-graphic xmlns:xlink=\"http:\/\/www.w3.org\/1999\/xlink\" mime-subtype=\"png\" xlink:href=\"S0963548322000360_inline12.png\"\/><jats:tex-math>$0$<\/jats:tex-math><\/jats:alternatives><\/jats:inline-formula>, random colourings of an appropriate density are asymptotically optimal and all nearly-extremal colourings are quasirandom.
