{"status":"ok","message-type":"work","message-version":"1.0.0","message":{"indexed":{"date-parts":[[2026,3,15]],"date-time":"2026-03-15T09:42:12Z","timestamp":1773567732599,"version":"3.50.1"},"reference-count":0,"publisher":"Cambridge University Press (CUP)","issue":"3","license":[{"start":{"date-parts":[[2000,10,19]],"date-time":"2000-10-19T00:00:00Z","timestamp":971913600000},"content-version":"unspecified","delay-in-days":79,"URL":"https:\/\/www.cambridge.org\/core\/terms"}],"content-domain":{"domain":[],"crossmark-restriction":false},"short-container-title":["Journal of Dairy Research"],"published-print":{"date-parts":[[2000,8]]},"abstract":"<jats:p>In the Iberian Peninsula, the proteinases present in the flowers of members of the \n<jats:italic>Cynara<\/jats:italic> genus, <jats:italic>C. cardunculus<\/jats:italic>, <jats:italic>C. humilis<\/jats:italic> and <jats:italic>C. scolymus<\/jats:italic>, have for many years been \nsuccessfully used in the manufacture of traditional cheeses from ovine and\/or caprine \nmilk on individual farms (Vieira de S\u00e1 &amp; Barbosa, 1972; Trujillo <jats:italic>et al<\/jats:italic>. 1994). In \nPortugal, <jats:italic>C. cardunculus<\/jats:italic> is the species most frequently employed. Although \ncommercial thistle was tentatively assumed to be pure in taxonomic terms, accurate \nanalyses have shown that the flowers of <jats:italic>C. cardunculus<\/jats:italic> are often mixed with flowers \nof <jats:italic>C. humilis<\/jats:italic> (Pires <jats:italic>et al<\/jats:italic>. 1994). The clotting activity of <jats:italic>C. humilis<\/jats:italic> is due to an \naspartic proteinase, currently designated cardosin A and similar to another enzyme \nobtained from <jats:italic>C. cardunculus<\/jats:italic>. This enzyme is similar in specificity and activity to \nchymosin (Pires <jats:italic>et al<\/jats:italic>. 1994).<\/jats:p><jats:p>The action of cardosin A from <jats:italic>C. cardunculus<\/jats:italic> upon ovine and caprine caseins has \nbeen reported recently (Ramalho-Santos <jats:italic>et al<\/jats:italic>. 1996; Simo4es, 1998; Sousa &amp; Malcata, \n1998), but as yet there is no information on the proteolytic activity of the proteinase \nfrom <jats:italic>C. humilis<\/jats:italic> upon caseins from milks other than bovine. Caseins from small \nruminants' milks are the usual substrates of cardosin during milk coagulation and \ncheese ripening, and sodium caseinate represents an intermediate system between \nisolated caseins and the cheese matrix that is free from interference by fat. Thus \novine and caprine caseinates may be useful substrates for investigating the \nproteolytic activity of cardosin.<\/jats:p><jats:p>The aim of the present study was to compare the action of pure cardosin A, \nobtained from <jats:italic>C. humilis<\/jats:italic>, on caprine and ovine caseinates, and to assess the <jats:italic>in vitro<\/jats:italic> \ncontribution of this enzyme to the overall proteolytic action of thistle rennet.<\/jats:p>","DOI":"10.1017\/s0022029900004234","type":"journal-article","created":{"date-parts":[[2002,7,27]],"date-time":"2002-07-27T13:45:41Z","timestamp":1027777541000},"page":"449-454","source":"Crossref","is-referenced-by-count":19,"title":["Action of cardosin A from <i>Cynara humilis<\/i> on ovine and caprine caseinates"],"prefix":"10.1017","volume":"67","author":[{"given":"SOFIA V.","family":"SILVA","sequence":"first","affiliation":[]},{"given":"F.
