{"status":"ok","message-type":"work","message-version":"1.0.0","message":{"indexed":{"date-parts":[[2026,1,28]],"date-time":"2026-01-28T22:39:46Z","timestamp":1769639986462,"version":"3.49.0"},"reference-count":0,"publisher":"Akademiai Kiado Zrt.","issue":"1","content-domain":{"domain":["akjournals.com"],"crossmark-restriction":true},"short-container-title":["Acta Alimentaria"],"published-print":{"date-parts":[[2016,3]]},"abstract":"<jats:p>The main objective of the present study was to evaluate the effect of temperature and different compression\/ decompression rates on the efficiency of <jats:italic>Listeria<\/jats:italic> inactivation by HPP.<\/jats:p>\n        <jats:p>Stationary phase cultures of <jats:italic>Listeria innocua<\/jats:italic> were subjected to 300 MPa for 5 min at 4, 10, and 20 \u00b0C using different compression and decompression rates. Inactivation was more efficient at low temperature and with lowest compression and decompression rates (1.5 MPa s<jats:sup>\u20131<\/jats:sup> and 3.2 MPa s<jats:sup>\u20131<\/jats:sup>, respectively).<\/jats:p>\n        <jats:p>Kinetics of pressure building up and decompression, as well as temperature, have a significant impact on the outcome of <jats:italic>Listeria<\/jats:italic> inactivation by HPP.
