A atmosfera no interior das embalagens consiste numa mistura de gases que est\u00e1 otimizada para cada alimento, de modo a preservar as suas qualidades durante mais tempo. A manuten\u00e7\u00e3o da temperatura de refrigera\u00e7\u00e3o durante o processamento, o armazenamento, a distribui\u00e7\u00e3o e a comercializa\u00e7\u00e3o \u00e9 essencial, por causa da natureza perec\u00edvel dos produtos frescos minimamente processados.
