A maioria das rea\u00e7\u00f5es al\u00e9rgicas a peixe s\u00e3o mediadas por anticorpos IgE e ocorrem poucos minutos ap\u00f3s a sua ingest\u00e3o ou contato. O principal alerg\u00e9nio no peixe \u00e9 uma prote\u00edna pequena e est\u00e1vel do m\u00fasculo branco que se liga ao c\u00e1lcio, chamada parvalbumina, a qual \u00e9 respons\u00e1vel por 70-95% das rea\u00e7\u00f5es al\u00e9rgicas. A altera\u00e7\u00e3o da express\u00e3o\/concentra\u00e7\u00e3o e\/ou da estrutura deste alerg\u00e9nio atrav\u00e9s da suplementa\u00e7\u00e3o das dietas dos peixes aparenta ser uma estrat\u00e9gia pioneira no ramo da nutri\u00e7\u00e3o em peixe e alergenicidade.
