It has been established that the content of nutritional and anti-nutritional components depends on the phase of plant development. The largest amount of oxalic and phytic acids, mg%: 79 and 156, respectively, was contained at the beginning of flowering of amaranth, tannins 75 mg% - at the beginning of budding, nitrates 7.4 mg% - at the beginning of fruiting. With a high content of crude protein in the green mass of amaranth (14.89%), the protein isolated from the phytomass is close to the ideal protein in terms of the number of essential amino acids, and surpasses these values in the content of isoleucine (3.1%) and lysine (6.01%) in the ideal protein.
